# What You'll Need:

01 - 1.1 lbs boneless, skinless chicken breast, cut into 1-inch cubes

→ Vegetables

02 - 1 red bell pepper, cut into chunks
03 - 1 yellow bell pepper, cut into chunks
04 - 1 zucchini, sliced into thick rounds
05 - 1 small red onion, cut into wedges
06 - 7 oz cherry tomatoes

→ Marinade

07 - 2 tbsp olive oil
08 - 2 tbsp lemon juice
09 - 2 garlic cloves, minced
10 - 1 tsp dried oregano
11 - 1 tsp smoked paprika
12 - ½ tsp salt
13 - ¼ tsp black pepper

# How to Make It:

01 - In a large bowl, whisk together olive oil, lemon juice, garlic, oregano, smoked paprika, salt, and black pepper.
02 - Add chicken pieces to the marinade, toss to coat evenly, and let rest for 10 minutes or up to 1 hour for enhanced flavor.
03 - Heat the grill or grill pan to medium-high temperature.
04 - Thread chicken, bell peppers, zucchini, onion, and cherry tomatoes alternately onto skewers.
05 - Cook skewers on the grill for 12 to 15 minutes, turning occasionally until chicken is fully cooked and vegetables are lightly charred.
06 - Remove skewers from grill and serve immediately with your preferred side dish.
