Picnic Caprese Skewers (Print Version)

Fresh cherry tomato, mozzarella, and basil skewers topped with a balsamic reduction, perfect for light outdoor bites.

# What You'll Need:

→ Skewers

01 - 24 cherry tomatoes
02 - 24 mini mozzarella balls (bocconcini or ciliegine)
03 - 24 fresh basil leaves
04 - 1 tablespoon extra virgin olive oil
05 - 1/4 teaspoon sea salt
06 - 1/4 teaspoon freshly ground black pepper

→ Balsamic Drizzle

07 - 1/2 cup balsamic vinegar
08 - 1 tablespoon honey

# How to Make It:

01 - In a small saucepan over medium heat, combine balsamic vinegar and honey. Simmer for 8 to 10 minutes, stirring occasionally, until the mixture is reduced by half and thickened. Remove from heat and let cool completely.
02 - On each 6-inch cocktail skewer, thread one cherry tomato, one mozzarella ball, and one basil leaf in sequence. Repeat this pattern to fill the skewer, finishing with a cherry tomato.
03 - Arrange the assembled skewers on a serving platter. Drizzle with extra virgin olive oil, then season with sea salt and freshly ground black pepper.
04 - Just before serving, lightly drizzle the cooled balsamic reduction over the skewers, or serve it on the side for dipping.

# Additional Tips::

01 -
  • They come together in the time it takes to brew coffee, so you can actually enjoy your guests instead of sweating in the kitchen.
  • People somehow taste 'fancy' in these even though they're absurdly easy, which means you look like you tried without actually trying.
  • The balsamic reduction adds this sweet-tangy depth that makes the simple tomato and mozzarella suddenly feel sophisticated.
02 -
  • The mozzarella must be cold when you assemble and serve—warm cheese tastes completely different, almost blah, so store everything in the fridge until the last possible moment.
  • Basil oxidizes faster than you'd think, so assemble these as close to serving time as possible; they're truly best within 30 minutes of threading.
  • Balsamic reduction is forgiving when cooling, but if it hardens too much, gently reheat it with a splash of water to loosen it back up.
03 -
  • Marinate the mozzarella balls in olive oil with thinly sliced garlic and a pinch of red pepper flakes for an hour before assembling if you want to add another layer of flavor without any extra effort.
  • Heirloom cherry tomatoes in different colors (yellow, purple, orange) look absolutely stunning on the platter and taste subtly different from each other, which keeps things interesting.
