Buckwheat Groats Breakfast (Print Version)

Nutty buckwheat groats cooked until tender and topped with fresh fruit, nuts, and a drizzle of honey.

# What You'll Need:

→ Buckwheat Base

01 - 1 cup buckwheat groats, raw and hulled
02 - 2 cups water
03 - 1/4 teaspoon salt

→ Toppings

04 - 1/2 cup mixed nuts such as almonds, walnuts, or pecans, roughly chopped
05 - 1 cup fresh fruit such as berries, banana slices, apple, or pear, diced
06 - 2 tablespoons honey or maple syrup, optional for sweetness
07 - 1/2 teaspoon ground cinnamon, optional
08 - 1/2 cup milk or plant-based milk, optional for serving

# How to Make It:

01 - Rinse buckwheat groats thoroughly under cold running water until water runs clear.
02 - In a medium saucepan, combine rinsed buckwheat groats, water, and salt. Bring mixture to boil over medium-high heat.
03 - Reduce heat to low, cover saucepan with lid, and simmer for 10 to 12 minutes or until groats are tender and water is fully absorbed.
04 - Remove from heat and let stand covered for 5 minutes. Fluff cooked buckwheat gently with fork to separate grains.
05 - Divide cooked buckwheat evenly between two serving bowls.
06 - Top each bowl with mixed nuts and fresh fruit. Drizzle with honey or maple syrup if desired and sprinkle with ground cinnamon.
07 - Serve warm immediately. Pour milk or plant-based milk over each portion if preferred.

# Additional Tips::

01 -
  • The nutty flavor profile makes every spoonful feel like a treat, not just breakfast fuel
  • It keeps you full for hours without that heavy, weighed-down feeling some grains can leave
  • The topping possibilities are endless, so you'll never get bored with your morning bowl
02 -
  • Overcooked buckwheat turns into mush, so start checking at the 10 minute mark
  • The groats absorb liquid as they cool, so don't worry if it looks a little soupy at first
  • A splash of milk while reheating leftovers brings everything back to life beautifully
03 -
  • Toast the dry groats in a dry pan for 3-4 minutes before cooking for an incredibly deep, nutty flavor
  • Add your dried fruit during the last minute of cooking so it plumps up beautifully
